Weekend dinner: Chicken and Lemon


Since I am on a roll, hehe, this is one of my favourite meals, Chicken and Lemon with Ugali. [I got the recipe aeons ago from a cookbook in our school library that had a variety of African dishes, and since I copied quite a few, I will be sharing the ones I have tried out so far].

For the Chicken you will need:-

  • 400g chicken, cut into pieces
  • 10 fresh garlic cloves
  • 1 large onion cut into quarters
  • 1tsp black pepper
  • Juice of 3 large lemons
  • 1/4 cup vegetable oil
  • salt to taste
  • 1/2 cup of water.

In a large dish, marinate the chicken with the onion, garlic, black pepper, salt, lemon juice, water and salt.

Mix well and leave for 2 hours at room temparature. Remove chicken from marinade.

Put a little oil in a heavy based pan and add the chicken, fry until golden brown.

Remove garlic and onions from marinade and add to the pan, fry for 5 minutes.

Add the rest of the marinade and simmer for 20-30 minutes.

Serve accompanied by ugali, though the original recipe calls for boiled cassava. Enjoy:-)
